The Best Digital Scales

A good scale weighs ingredients accurately, so you always get the right results. Which is best?

What You Need to Know

Digital scales measure ingredients by weight to guarantee accuracy. Our winner is the OXO Good Grips 11 lb Food Scale with Pull Out Display. It’s fast and accurate within a couple grams, which is enough for most cooking needs. The removable platform makes for easy cleanup and the large, backlit display can be pulled away from the platform so you can put a big bowl on top and still see the screen. Our Upgrade Pick is the ThermoWorks Gravitas Precision Kitchen Scale. It’s more accurate, to ±0.7 gram, as certified by the National Institute of Standards and Technology (NIST). It can measure to a tenth of a gram and up to 11 pounds, so it can function as a coffee scale (which requires more precision) and a regular kitchen scale. The display screen detaches completely for visibility and is held on by magnets when in place. We also chose a Best Buy, the Ozeri Pronto Digital Multifunction Kitchen and Food Scale. While it doesn’t have any extra features and isn’t as sturdy, it’s a good, accurate, and (much) less expensive option.

A digital scale is a game changer in the kitchen. A scale is critical for baking recipes, where measuring dry ingredients by weight is the only way to guarantee accuracy. We’ve proven this in tests where we’ve repeatedly measured a cup of flour by volume, using a “dip and sweep” method, and found that there can be up to a 20 percent difference in the weight—a variance that can mean the difference between a cake that’s squat and dense and one that’s fluffy and tender.

image of a well risen cake on the left and a poorly risen cake on the right
Measuring ingredients by weight is the only way to ensure predictable results. With close to a 20 percent margin for discrepancy when measuring by volume, the difference can result in a fluffy, tender cake, or one that doesn’t form up well.

Scales have many applications in cooking too. Using one to portion burgers, for example, means no more guessing if the patties are the same size and will thus cook at the same rate. They can even make cooking and cleaning more efficient, thanks to the help of the "tare" function. Instead of dirtying different measuring cups or spoons to get the right amount of each ingredient, you can measure ingredients directly into your mixing bowl, pushing the tare button between each ingredient to reset the displayed weight on the scale to zero.

We tested a variety of consumer-grade scales with maximum capacities from 9 to 15 pounds, as we find this to be the most useful size for most cooks. All of the scales we tested except for one have a resolution of 1 gram, meaning they can display weights in 1-gram increments. This does not mean, however, that they reliably detect weight differences of a single gram. A range of ±3 grams is common and acceptable for most cooking, and most consumer-level scales don’t specify their accuracy range. The outlier is a new scale from Thermoworks, the Gravitas, which measures to a tenth of a gram and has a certified resolution of ±0.7 grams.

What to Look for

  • Accuracy: All of the scales were acceptably accurate, measuring within a gram or two of the correct mass when we tested them with calibrated lab weights. A couple consistently displayed fluctuating readings, but even those were just a few grams off the mark. This is accurate enough for most kitchen needs. Our Upgrade Pick stands apart with a certified accuracy to ±0.7 grams, a higher level of precision that makes it also suitable for weighing coffee beans, which are measured to the gram, a task most kitchen scales can’t do.
We liked models that had pull-out or removable displays, as these let us see how much we’d measured even with a large bowl on the scale.
  • Easy-to-Read Display: The best digital scales had displays that showed their measurements in large, bold numbers. They also had displays that we could see, even with a large bowl on the measuring platform. Our overall winner has a display that can be pulled out four inches from the platform, ensuring the screen is visible under even bulky items. Our Upgrade Pick’s display can be removed completely; it’s connected by magnets. This allowed for exceptional visibility and easier cleaning, because it doesn’t have a tether to clean around, like our winner.
  • Easy and Intuitive Use: We liked scales with simple, intuitive interfaces that made it easy to power on, switch between grams and ounces, and tare.
The tare button lets you reset the scale’s display so that you can easily measure several ingredients into the same bowl.
  • Moderately Heavy, Flat Design: When it came to countertop stability, scales weighing more than 1 pound stayed put more reliably. Flat, slim models were also more stable and were easier to store.
  • A Removable Platform: We preferred models that allowed us to take off their platforms for easy cleanup. Models with fixed platforms and hard-to-reach crevices trapped flour and made us worry that cleaning spray or soapy water might get into the machine and risk damage.

What to Avoid

  • Inaccuracy: We expect consumer-grade kitchen scales to be accurate within 3 grams of the correct weight. While all the models we tested were accurate within this range, we preferred models that stayed closer to the correct value.
  • Hard-to-Read Displays: Legibility was problematic on models with tiny, hard-to-read, or obscurely labeled buttons but was even more of an issue on scales where the control panel was flush with the platform rather than set into a separate part of the scale body. No matter how big and crisp the display was on these scales, larger bowls cast a shadow over, or completely blocked, the screen, forcing us to bend down to peer underneath or nudge the bowl backward until it threatened to fall off the back end of the platform.
  • Difficult Operation: Some scales were so unintuitive to operate that we can’t recommend them. Users fumbled around for a switch or button to change the unit of measurement from grams to ounces. On one of the losing models, this was a tiny toggle on the underside of the scale underneath the battery cover, which we only found once we referred to the owner’s manual. On another, you must gently press the “on/off” button as the scale powers up—and if you miss that brief window, you have to turn it off and start all over.
  • Light Weight or Feet: Models weighing less than a pound or that had feet frequently teetered back and forth or slid around on the counter.

The Tests:

  • Check accuracy using 30-, 200-, and 500-gram lab weights
  • Turn on scales, measure flour in large bowl, switch units, tare weight
  • Drop models from height of 2 inches, then check accuracy again
  • Stain with mustard, tomato paste, and canola oil; dust with flour; then clean

How We Rated

  • Accuracy: We rated the models on how accurately and consistently they measured different masses, giving preference to models that consistently provided measurements within 3 grams of the correct mass.
  • Ease of Use: We rated the models on how easy they were to turn on, navigate, and use with different vessels. We also evaluated the legibility of the display and the ease with which we were able to switch between units.
  • Cleanup/Durability: We evaluated the models on how easy they were to clean and on how well they withstood light drops.

FAQs

When measuring multiple ingredients that will be combined, such as the dry mix for baked goods, using a digital scale’s tare button is more accurate than the “dip and sweep” method and reduces the number of dirty dishes. Set one bowl on the scale for measuring each ingredient and a larger one next to the scale for compiling the measured ingredients, and then press the tare button to reset the scale to zero. Add the ingredient to the bowl on the scale until it registers the correct amount, and then transfer the measured item to the larger bowl. Repeat with the now-empty bowl and another item.

The scales in this review are the most useful type for most home cooks. Our Upgrade Pick, the ThermoWorks Gravitas, can measure to a tenth of a gram, a level of precision that’s unique in this category and essential for tasks such as measuring coffee beans for espresso. (We’ve also reviewed scales designed for making coffee, some of which have built-in timers to help with the specific timing requirements of pour-over coffee.) Because of its ±0.7 gram margin of error, the Gravitas is not reliable for measuring ingredients that weigh less than a gram, such as tiny amounts of yeast or xanthan gum. You would need a specialized precision scale for those, but be aware: These scales typically max out at 1000 grams or less (or about 2.2 pounds), so you would still need a standard kitchen scale with a roughly 10-pound weight limit for common ingredients such as sugar and flour.

OXO Good Grips 11 lb Food Scale with Pull Out Display

This accurate, sturdy scale is our longtime winner. It’s easy to use, with responsive buttons, and has a removable platform for easy cleaning. The display can be pulled out nearly four inches, which makes it easy to read measurements when weighing oversize items. The area under the pulled-out display was harder to clean, because we had to detail around the tether, but the visibility gains make it worthwhile. The screen is very easy to read, with large, brightly lit digits on a dark background. The scale was accurate enough for baking and coking, where a variation of a couple grams won’t matter. OXO doesn’t state a margin of error for this scale; we found it at times to be 1–2 grams off, which is a negligible amount for most needs but means it isn’t accurate enough to weigh coffee beans. If you need accurate measurements to the gram, consider our Upgrade Pick.

Upgrade PickThermoWorks Gravitas Precision Kitchen Scale

This new scale from ThermoWorks, the maker of the Thermapen, our longtime winning digital thermometer, is more precise than your typical digital kitchen scale, with a resolution down to a tenth of a gram and all the way up to 11 pounds. This means it can also function as a coffee scale, where tasks like espresso require precision to the gram. It’s accurate to ±0.7 gram, as certified by the National Institute of Standards and Technology (and includes a certificate of verification), compared to the ±3 gram range typical for digital kitchen scales. The two-button interface makes it easy to tare the scale and toggle between measurement units. The display screen is attached by magnets and can come entirely off the base, so you can put large bowls on the scale without blocking the readout. You can even put the display on the refrigerator if you’d like; the output rotates 180 degrees when turned for maximum visibility from various angles. Because the display screen detaches completely, it’s easy to clean under and around it. The model reads slightly slower than the OXO, in one second versus a half a second, a difference we found insignificant in use. It’s substantial without being bulky and has grippy feet, so it was exceptionally sturdy and stayed put on the counter. Designed for survival in commercial kitchens, it handled our durability testing easily, without physical damage or a change in accuracy. The scale’s IP66 waterproof rating means it can survive heavy spills and rigorous cleaning. Not everyone needs a scale with this level of accuracy and toughness, but for those that do, the Gravitas is an excellent option.

KitchenAid 11 Pound Digital Glass Top Kitchen and Food Scale

We really liked this accurate, durable scale. A glass top provided a single continuous surface that covered both the platform and the bright display and proved simple to wipe clean. And we appreciated the navigation dial, which allowed us to select the units we wanted, tare weights, and power the machine on and off easily, though it did collect flour and required a little extra work to clean. It was heavy enough to sit securely on the counter but slim enough to store easily. Quibbles were few The display sometimes took a little more time to settle on the correct measurement, and both it and the platform are a bit smaller than we prefer. And because the display is flush with the platform, it can be hard to read out measurements when a large bowl is placed on top.

OXO Everyday Glass Food Scale, 11 lbs

This compact scale was accurate, and with a smooth glass surface that doubled as both platform and display, it was very easy to clean. While the display itself wasn’t quite as large as that of our top choice, the numbers were backlit and easy to read. We noted just a few small issues. The model is quite thin and lightweight—great for storage, but a little less secure on the counter. And because the display is part of the platform, it can sometimes be hard to see measurements when a large bowl is placed on top. Finally, the touchscreen buttons that we used to tare weights and choose units weren’t always as responsive as we’d have liked and sometimes took a few presses to register our fingers.
