Why This Recipe Works

We give classic stuffed shells a Louisiana spin, filling them with a creamy, shrimp-studded ricotta and blanketing them in a Creole-spiced tomato sauce. We season both the filling and the sauce with Creole seasoning and Old Bay, layering the same warm, briny spices throughout the dish. Crushed tomatoes and tomato paste give the sauce deep, abundant tomato flavor, accentuated by a generous five sprigs of fresh thyme, while half-and-half makes it rich and velvety. Stirring cooked small shrimp into the cheese filling keeps assembly fast, and a final run under the broiler turns the Parmesan topping golden and bubbly.
