Add ½ cup minced fresh parsley, ¼ cup minced fresh cilantro, 3 minced garlic cloves, ½ teaspoon table salt, and ¼ teaspoon red pepper flakes and stir to combine. Whisk in ¼ cup extra-virgin olive oil until incorporated.

Why This Recipe Works
For a cooking method that reliably turned out delicious, flaky white fish fillets, we used a common technique borrowed from professional kitchens: Sear the fillets in a hot skillet, flip, and transfer the skillet to the oven to continue cooking rather than finishing on the stove. A well-browned crust appeared in around a minute, giving the interior time to turn succulent in the oven. A cilantro chimichurri brought lovely herbaceous flavor to the dish and was easy to make by simply stirring the ingredients together.
