Ingredients
Before You Begin
If you don’t have a food processor with a shredding disk, you can grate the potatoes and onion by hand on the large holes of a box grater. Be careful of sharp edges! Serve with applesauce and sour cream, if desired.
Instructions
- Adjust oven rack to middle position and heat oven to 400 degrees. Spray baking sheet with vegetable oil spray. Pour oil onto baking sheet and tip sheet until evenly coated.
- Set shredding disk in food processor (ask an adult for help). Lock lid into place. Place potatoes and onion in feed tube. Turn on processor and push vegetables down with plunger. Stop processor. Remove lid and carefully remove disk (ask an adult for help).
- Transfer vegetables to center of clean dish towel. Gather ends of towel together, twist tightly, and squeeze over sink to drain as much liquid as possible from vegetables.
- Transfer vegetables to large bowl. Add flour, egg, and salt. Use your hands or rubber spatula to mix until well combined.
- Use ¼-cup dry measuring cup to scoop and drop 12 mounds of potato mixture onto greased baking sheet. Gently press each mound to flatten (see photo, “Step-by-Step: How to Shape Latkes,” below).
- Place baking sheet in oven and bake latkes until bottoms are browned, 25 to 30 minutes. Ask an adult to use spatula to carefully flip latkes (oil will be hot). Bake until second side is golden brown, 5 to 10 minutes.
- Use oven mitts to remove baking sheet from oven and place on cooling rack (ask an adult for help). Line serving platter with paper towels. Transfer latkes to paper towels. Let latkes drain and cool for 5 minutes. Serve.

Why This Recipe Works
Latkes are a beloved Hanukkah recipe, but frying them in splattering oil on the stovetop can be a little scary and dangerous for young chefs. This recipe bakes the latkes on a well-oiled baking sheet—you’ll still get crisp exteriors and soft interiors, but none of the scary splatter. Squeezing out as much liquid as possible from the potatoes and onion is key for crispy latkes. When it’s time to drain the vegetables in step 3, have your young chef squeeze them over a bowl to catch the water that’s released. Then, have them pour the drained liquid into a liquid measuring cup to see just how much water they squeezed out.
