Why This Recipe Works

To preserve the vibrant color and crisp-tender texture of the green beans, we blanch them in salted water (which also ensures they’re properly seasoned), then shock them in cold water to stop the cooking process. For the dressing, we chose a bright and creamy lemon sauce that complements the beans’ natural sweetness. To top it all off, we fry briny capers in the microwave until crispy and then sprinkle them over the beans along with some chopped dill.
