Before You Begin
This recipe is inspired by Charles Phan's recipe from his cookbook The Slanted Door: Modern Vietnamese Food (2014). The saltiness of fish sauce can vary; we recommend Red Boat 40°N Fish Sauce. This dish is intensely seasoned, so serve it with plenty of steamed white rice, preferably jasmine.
Instructions
- Heat oil in 12-inch nonstick skillet over medium-high heat until shimmering. Add shallots and ginger and cook until softened, about 2 minutes. Stir in sugar, fish sauce, vinegar, chili-garlic sauce, and pepper and bring to simmer, stirring to dissolve sugar. Cook until very thick and syrupy, about 5 minutes.
- Stir in chicken and cook, stirring occasionally, until cooked through, 5 to 7 minutes (sauce will thin out as chicken exudes moisture). Sprinkle with cilantro and serve.

Why This Recipe Works
Traditional Vietnamese caramel braises require making a dry caramel from scratch, a process that demands constant attention and carries a real risk of burning. Swapping in dark brown sugar for granulated sugar, a technique we learned about from Charles Phan, eliminated that step entirely while still delivering the deep bitter-sweetness that gives the dish its signature flavor. Reducing the sauce to a thick, syrupy consistency before adding the chicken was the key to the final texture: The chicken released moisture that transformed it into a perfectly clingy glaze. Coarsely ground black pepper is not a background seasoning here but instead a primary flavor, contributing sharp, pungent heat that played well against the sweetness of the sugar and the saltiness of the fish sauce. Cilantro stirred in at the end added a fresh, herbal lift that kept the intensely seasoned dish from feeling heavy.
