  1. Adjust oven rack to lower-middle position and heat oven to 300 degrees. Heat 2 tablespoons vegetable oil in Dutch oven over medium heat until shimmering. 3. Add 2 tablespoons tomato paste and cook, stirring frequently, until paste darkens to light brown, 2 to 3 minutes. Stir in 2 cups water, scraping up any browned bits. Nestle 1 boneless pork butt roast, trimmed, into center of pot. Increase heat to medium-high and bring to boil. Remove from heat, cover, and transfer to oven.
  4. Cook until pork is completely tender and falling apart, 3½ to 4 hours. Remove from oven. Discard cinnamon and bay leaves. Shred pork in pot. Stir in ¼ cup cider vinegar and season with salt to taste.

Why This Recipe Works

Goan pork dishes are defined by bold spices—cloves, cinnamon, chiles—and a sharp hit of vinegar that cuts through the richness of the meat. For this taco recipe, we braise pork butt low and slow in the oven until completely tender, then stir in vinegar at the end to brighten the deeply spiced braising liquid. A quick tomato chutney, built from burst cherry tomatoes and bloomed mustard seeds and curry leaves, adds freshness and a little heat.

Before You Begin

Serve the pork and chutney wrapped in warm toasted rotis or flour tortillas with fresh cilantro leaves, shaved cabbage, and/or thinly sliced serranos.
